【生活点滴】 有意义的圣诞! ;) Updates : Joyful Christmas 2015

Merry Christmas to you!

It's the time of the year where everyone are excited about! 

This year is my first with my new family and since the day before eve, we were busy with the preparation for the Christmas eve. Dinner for the family and relatives.


- Macarons - 

Good to see friends placed their order and happy with the gifts to their friends.


- Fruit Cake *contain alcohol* -


- On Christmas Eve -

The Hubs become my assistant and mostly done by me and both main dishes (chicken and lamb) by my mom and dad. :) Thanks mom and dad for helping out!

Here's were what we had. Starter - Green Salad, Potato Salad, Mushroom Soup. Main Dishes - Spaghetti with Mushroom Sauce, Rosemary Chicken and Lamb Chop. Desserts - Macarons, Red Bean Sweet Soup with Glutinous Rice Balls (Aunt). 

Everyone were satisfied and went back with home with heavy tummy!

On Christmas Day!

Breakfast with my new family, went shopping and lunch with my parents and end our day with evening tea and Korean dinner!

Enjoy our short video and well, he was just shy! Merry Christmas!

On our Christmas Day, finally sit down for a cup of drink.

Easy Recipe 123 : I Love BUTTER COOKIES!!

:) Most of you know that I love checking out the new cafes in town or others recommended ones.

But... did you know that I love baking? and sometimes I even cook! ;)

Its been a while since the last I wrote recipe that I have prepared for my family and loves one. 

 

- Afternoon Tea at Home - 

A nice presentation with nice plate and coffee/ tea aside, just suit me well. :)

So now, melting away with all the butter cookies I have baked! My parents totally in love with them and told me to bake for CNY as well! And I just in love with BUTTER COOKIES!


- Baking of Chocolate Chip Butter Cookies in Progress -


- Pure Butter Cookies and Chocolate Chips Cookies -

Recipe for Pure Butter Cookies
Preparation Time : 30 minutes
Baking Time : 15 minutes
Portion : 30 - 35 pieces

*All of the above may vary, depends on how we prepared them. :)

Ingredients :
150g     Plain flour/ All purpose flour
30g       Corn flour
20g       Custard Powder
160g     Unsalted Butter (soften)
50g        Icing Sugar
1/4 tsp  Vanilla Essence
1 tsp      Baking Powder

Steps :
1.   Preheat oven 180C/ 356F. (Baking paper lay flat on pan)
2.1 Plain Flour, Corn Flour, Custard Powder and Baking Powder mixed well and filtered.
2.2 Icing Sugar filtered well and to be used later.
3.   Unsalted butter, Icing Sugar and Vanilla Essence - Beat till white and fluffy.
4.   Add in 2.1 into 3, use slow mode to beat or using hand to mix all of them together.

5. IT'S MOLDING/ SHAPING TIME!!
Using our hand to mold the mixture in to a long rounded pattern (swiss role/ pipe look alike), then use the plastic food wrap to wrap the whole patterned mixture.
Store it in the fridge for 15 - 20 minutes to harden it, so that it could be easier cut later.

6. Took it out from fridge, using knife to cut into shapes. Put on pan and bake them for 15 minutes! DONE!

Easy Recipe 123 : Chocolate Cake

Experimenting chocolate cake for the first time.


 


And the first end product of my chocolate cake creation... Put too much chocolate powder, so end up too brown in colour.




Ingredients (A little recipe learned from my mom's helper.)

  • Chocolate powder - 40g or more (remember to make it around 200g all together with the flour)
  • Self raising flour - 160g
  • Butter - 200g
  • Sugar - 200g
  • Eggs - 5/6 pcs (depend on the egg size)
  • "Ideal milk" - a little
  • Chocolate paste - 2/3 drops

Steps:

1) Beat butter and sugar until firm and fluffy.

2) Add in eggs and beat again.

3) Add in chocolate paste so that the chocolate smells good.

4) Add in stiffed flour and chocolate powder. Beat again until all ingredients are all well balanced.

5) Add "Ideal milk" a little so that the cake will smell better.

6) Put in case and bake the cake for about 45 minutes at 180/200 Celsius.

7) DONE!

Easy Recipe 123 : Raisins, Corn Flakes & Pineapple Cookies

Having some mood to make cookies by following the ingredients and steps from a recipe found in a magazine. There's modification made after the first trial with the actual ingredient.

Ingredient:
  • 280g self raising flour
  • 120g butter
  • 110g caster sugar
  • 1 egg
  • 80g raisins (black or yellowish)
  • 2 tablespoon fruit peels
  • A pinch of salt
Steps:

1) Beat butter and sugar together until white and fluffy.

2) Add egg and stir, add flour slowly into the bowl of mixture.

3) Use hand to mix above mixture until it become like picture shown below.

4) Add raisins and fruit peels before putting on the pan.
5) Use tablespoon to design the cookies.
6) Bake cookies for 15 to 20 minutes (or monitor the cookies until it's colour turns into brown) with 180 degree temperature.

On the second day, I tried to make another type of biscuit with different flavour and design. My mom's worker told me to add some corn flour (starch), custard flour and wheat flour together in exchange with the self raising flour (280g), so that the biscuit will be crunchy. Besides, one or two drops of vanilla essence into the mixtures of flour can make the biscuit smells better.
The below was made with corn flakes and the pattern with strips on top of the biscuit was done by using a fork.



I've made other patterns of biscuits too... with chocolate chips, almond etc...


Pineapple tart. My mom favorite.
The pineapple can be found in some supermarket, or can be done our own... At first "shave" (or blend using blender - not preferable unless you are lazy) the pineapple into a big bowl to prevent from overflowing. It looks like juice. Then, cook the shaved pineapple until dry and yellowish. And don't forget to add sugar while cooking!!! One pineapple 3 tablespoon sugar (depend on preference).


p/s: Remember to spread some mixture of eggs, sugar and vanilla essence (mixed together) to "brush" the surface of those biscuit, so that it looks yellowish & attractive after its done.... YUMMY!!!
